Ingredients:
- 2 cups cooked rice
- 2 tablespoons vegetable oil or sesame oil
- 2 large eggs, beaten
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup peas (or mixed vegetables of choice)
- 1/2 cup diced carrots
- 2 green onions, sliced
- 2-3 tablespoons soy sauce (adjust to taste)
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil (optional)
- Salt and pepper to taste
- Protein of choice (e.g., chicken, shrimp, tofu, or pork) – optional
Instructions:
Prepare the ingredients:
- If using leftover rice, break up any clumps so the rice is loose. If you don’t have leftover rice, cook it ahead of time and let it cool completely.
- Chop your vegetables and protein (if using) into small, bite-sized pieces.
Cook the eggs:
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Pour in the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
Stir-fry the vegetables:
- In the same pan, add another tablespoon of oil.
- Add the diced onion and minced garlic. Stir-fry for 1-2 minutes until fragrant and softened.
