Simple Fried Rice Recipe

 Here's a simple and delicious fried rice recipe:



Ingredients:

  • 2 cups cooked rice 
  • 2 tablespoons vegetable oil or sesame oil
  • 2 large eggs, beaten
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup peas (or mixed vegetables of choice)
  • 1/2 cup diced carrots
  • 2 green onions, sliced
  • 2-3 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • Protein of choice (e.g., chicken, shrimp, tofu, or pork) – optional

Instructions:

  1. Prepare the ingredients:

    • If using leftover rice, break up any clumps so the rice is loose. If you don’t have leftover rice, cook it ahead of time and let it cool completely.
    • Chop your vegetables and protein (if using) into small, bite-sized pieces.
  2. Cook the eggs:

    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
    • Pour in the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
  3. Stir-fry the vegetables:

    • In the same pan, add another tablespoon of oil.
    • Add the diced onion and minced garlic. Stir-fry for 1-2 minutes until fragrant and softened.
    • Add the diced carrots and peas (or mixed vegetables). Stir-fry for another 2-3 minutes until the vegetables are tender.
  4. Add rice:

    • Add the cold rice to the pan. Use a spatula to break up any clumps and ensure the rice gets evenly heated.
    • Stir-fry for 3-4 minutes, allowing the rice to crisp up slightly on the bottom for extra texture.
  5. Season the rice:

    • Add the soy sauce, optional oyster sauce, and sesame oil. Stir to coat the rice evenly with the sauce.
    • Season with salt and pepper to taste. Add your scrambled eggs back into the pan, along with the sliced green onions, and mix everything together.
  6. Optional protein:

    • If using a protein (chicken, shrimp, etc.), you can stir it in at this point if it’s already cooked, or cook it before adding the vegetables.
  7. Serve:

    • Once everything is well combined and heated through, remove from the pan and serve immediately.


Tips:

  • You can customize your fried rice with any leftover vegetables or proteins you have on hand.
  • For extra flavor, you can add a little bit of hoisin sauce, garlic powder, or chili sauce.
  • To make this recipe vegan, simply omit the eggs and use tofu or another plant-based protein.
